- STEA4102ESteam combination ovens allow flexibility in your kitchen as well as reduced cooking times and higher quality food output. This huge 20 x 1/1GN capacity oven offers 3 cooking modes convection cooking, combination cooking and super steam cooking. With easy to operate manual controls every cooking variable can be precisely controlled to give the best possible results every time. The roll in rack makes loading, unloading and cleaning the oven a breeze.
Convection Mode:
Convection cooking mode works just like a standard oven providing a dry heat that coupled with the cavity design and fans will cook food evenly and quickly. Steam can be manually injected with a regeneration button if required.
Combination Mode:
Convection cooking with steam cooks for faster and retains far more of a food essential moisture greatly reducing shrinkage while still allowing food to brown. Combination cooking mode is also perfect for reheating food.
Super Steam Mode:
Cooks food quickly and safely in a steam rich environment at 95°C eliminating the need for having hazardous stock pots boiling on the stove. This mode is perfect for poaching and there is no flavour transfer so different foods can be cooked simultaneously.

Installation: A water treatment unit must be fitted to the machine to avoid scale and harmful minerals to enter the cavity of the oven. Failure to do so will affect the life span of the oven and it will invalidate your warranty.
